[include-fixer] Simplify unittest code.
Summary:
The InMemorySymbolIndex only constructs hard-coded Class symbols from a string
map. The patch provide a flexable way in InMemorySymbolIndex to create a custom
SymbolInfo in the include-fixer unittest.
