IR: Cleanup MDNode field use, NFC
Swap usage of `SubclassData32` and `MDNodeSubclassData`, and rename
`MDNodeSubclassData` to `NumUnresolved`. Small drive-by cleanup to
`countUnresolvedOperands()` since otherwise the name clash with local
vars named `NumUnresolved` would be confusing.
